Sadly, we never see Meyer lemons in this part of N. America (central Alberta, Canada) but blood oranges ARE on the market right now. Could I sub regular lemons for the Meyers? Very good procedure notes, thanks.

I started canning awhile ago, unfortunately; it was after strawberry season. The kids fell in love with canning everything apples!!! They are soooo excited about the upcoming many seasons with many varieties of fruits and veggies to come. They cannot wait to make everything strawberries now-thanks for the perfect idea about strawberry applesauce!!!

the yolk mixture is a pastry cream. the recipe can be simplified if you just add the original sugar and flour right to the yolks. then pour all the simmering milk into that. there is no need to temper it because the flour changes the physical properties of the proteins in the yolk. follow the rest of the recipe as written

I have to say, those young dryad's saddle look really perfect. I find them often when searching for morels. I only take those that are very young because they get very tough when they are older. But, when they are young and tender, they are very good. The don't have much flavor on their own and are best in some kind of marinade and then baked. They're also tasty battered and fried. Next time you find some I highly suggest you give them a try. They're a great find when you don't have enough luck to find morels.
